Creamy polenta and flavorful ratatouille are two dishes that scream comfort food. Both rich, smooth, and super spoonable, they’re already delicious on their own. But when they’re paired together? Well, they’re a perfect (and vegetarian-friendly!) match.
Made from cornmeal, polenta is commonly used in Italian cooking. The ingredient, which can be eaten sweet or savory, is usually boiled and then baked or fried. But it can also be eaten soft, almost like grits. Unlike other creamy dinner sides though (we’re looking at you, mashed potatoes), polenta is actually low in carbohydrates. Plus, it’s rich in vitamins A and C.
Ratatouille is a French dish that’s packed with good-for-you ingredients, like eggplant, tomatoes, zucchini, chickpeas, and bell peppers, among others. The final product is a stew-like mixture that offers a variety of important nutrients. For example, tomatoes provide potassium, eggplant offers folic acid, and chickpeas add a hit of protein to the mix. And all of the veggies load you up with dietary fiber, which helps keep your digestive system in check.

In this video, we’re showing you how to combine the two healthy dishes to make a one-bowl dinner that’s sure to satisfy.
First, simply boil the polenta and mix in a few flavor-boosting ingredients, like parmesan, to start. Next, sauté the ratatouille ingredients in a skillet with heart healthy olive oil for about 10 minutes. Once the veggies are soft, remove them from the heat and place them in your polenta-lined bowls. Top with fresh basil, and enjoy. Yes, it’s really that easy.
